
This veg franki vegetable frankie recipe is a yummy healthy recipe, spell it as franki, Frankie or frankey.
Vegetable frankie is a favorite of kids as well as grown ups. You can do some preparation in advance and do the final assembling at the time of serving.
As this frankie contains lots of vegetables, it is a sure way to get family member to have vegetables that they otherwise may not be willing to eat. Kids as well as grown ups are fussy about what vegetables they would eat or wouldn’t.
- You may serve frankey as breakfast, lunch or dinner as it is quite filling.
- you may also pack it for lunch box as the vegetables are cooked to a dryish consistency and do not let the franky become soggy.
- this is a good one for brunch or a filling snack.
How to make Vegetable frankie
Veg franki Vegetable Frankie Recipe
Spell it as franki, Frankie or frankey, this vegetable frankie recipe is a yummy and is a favorite of kids as well as grown ups.
Ingredients
- 2 cups Atta whole wheat flour I am using only whole wheat flour. You may use plain flour if you wish.
- 1/2 tsp Salt
- 1 oil Vegetable – tsp
- Water – to make dough.
For the vegetable subji stuffing, I usually use a mix of vegetables. Sometimes I add paneer too. Today I am using:
- 1 cup Potatoes cubed small
- 1/2 cup Green Capsicum chopped
- 1/2 cup Onion cup chopped
- 1/2 cup Tomato cup chopped
- 2 Green chilies more or less according to taste
- 1/2 masala Garam – tsp
- 1 tsp Garlic ginger paste or chopped finely
- 1/2 tsp Salt
- 1 tbsp Butter or
- 1 tbsp vegetable oil
Instructions
- mix atta, salt and oil

- Add water as necessary and make soft dough as you do for chapati.
- Keep aside covered for about 20-30 minutes.

- Divide dough in 7-8 round balls. Roll out each ball in a circle.
- Cook on a hot tava/girdle. Make chapaties/tortillas with the dough as you normally make. There is no need to fold and apply oil in between.

Making vegetable stuffing for Frankie:

- In a deep pan, heat oil or butter. Add cumin seeds. When they stop spluttering, add chopped onions and finely chopped green chilies.
- Fry for 2- minutes. Add garlic and ginger paste. Keep stirring.
- Add chopped tomatoes. Stir and cook covered for 2 minutes.
- Add potatoes. Cook covered for 3-4 minutes. Add capsicum. Cook for 2 minutes without covering.
- Add salt, sugar, garam masala and chopped coriander leaves. If adding paneer, add it now. Mix well and cook till the vegetable mix is dryish.
- Take off the fire. Let cool.
- This vegetable mix needs to be dry. So no water is to be added at any stage. After you add capsicum, do not cover. Let it cook with the pan uncovered.
How to assemble vegetable Frankie
- Take one chapatti or tortilla. Spread a little tomato ketchup on it.
- Place 2 tbsp vegetable mix in the middle of the chapatti lengthwise. Fold one side of the chapatti to cover the vegetable mix and then the other side over it. In this way fill 2 or 3 chapaties with veg mix.
- Heat tava. Keep heat medium. Add a little oil or butter or ghee on the tava. Place 2-3 stuffed frankies on it, open side downwards.
- Apply a little butter or ghee or oil on top. Let it cook for a few seconds. Turn over carefully. Let cook till it gets a few brown spots at the bottom.

Notes
Tips:
- If you like a crisp frankie, Keep heat low once the tava is hot and cook the Frankie for a longer time.
- Depending on the size of your tava(girdle, skillet) you may shallow fry 2-3 or more frankies at a time.
- You may use tomato ketchup as given in this recipe to spread before adding vegetable mix or you may use your favorite chutney or mayonnaise.
- The chutney should not be watery. You may use pudina – mint chutney,coconut chutney, tomato chutney, green tomato chutney etc. Each chutney will add it’s own flavor and taste to the frankie. So try out making frankie with different chutnies.
